There are several different species of crayfish. The most common one in Finland today is the Signal crayfish Pacifastacus leniusculus. Crayfish season starts at noon 21.7 and goes on untill October.

Viltgårdens Kräftor

At Viltgårdens Kräftor we produce high quality, deliciously cooked signal crayfish. The crayfish are fished in Finland by our contract fishermen. Each batch is cooked with care using the family recipe of the Landers family. We mainly cook to order so that our customers get fresh crayfish during the crayfish season. If you are interested in crayfish out of season, we also have some frozen crayfish. They are delicious when thawed and can be enjoyed at any festive occasion. Why not celebrate New Year with crayfish. 

The tradition of eating crayfish

Crayfish have been documented to have been eaten in Scandinavia since the 1500s. The traditions surrounding the actual eating has been different in different regions and the traditions are also changing as any good tradition should. Crayfish were at one point considered medicinal and reserved for kings and nobles but today anyone can enjoy the lovely crustacean.  

Inspiration

Crayfish can be eaten as a starter on a slice of toast or enjoyed as a main course. Crayfish can be eaten in a salad or made into soup. There are many ways of serving crayfish, all delicious. Forest mushrooms, like the chanterelle, go well with crayfish. Enjoy a creamy mushrooms soup as a starter, add some fresh potatoes and dill and other seasonal vegetables and you have meal fit for a king. Snaps and singing are part of the tradition for many Finns, we provide several small booklets with songs for printing at home.

How to order

The crayfish are mainly sold online through our web shop. We deliver to several different locations in Southern Finland. Unfortunately, the online ordering is only available in Finnish or Swedish.
